Production area

The cultivation area of ​​the Peperoni di Senise is located in Cavallotra between the province of Potenza and that of Matera; most of the municipalities involved, including Senise, fall within the Pollino National Park.

Features

It has small dimensions, variable shape (pointed, curved, blunt) and color that changes from green to purple red. It has a thin skin and a low water content which allows it to dry quickly. It also has a stalk that remains firmly joined to the berry even when ripe. This allows the peppers to be brought together to form the braids and necklaces of dried peppers typical of the places of production.

Production regulations - Peperone di Senise PGI

Article 1
The protected geographical indication "Peppers of Senise" is reserved for peppers that meet the conditions and requirements established by this production specification.

Article 2
The denomination "Peppers of Senise" is reserved for three morphological types:
"POINTED" type
"TRUNK" type
Type "HOOK"
belonging to the same population as provided for in the production specification.
It should be noted that the "pointed" one is the prevailing Type.

Article 3
The production areas of the "Peppers of Senise" are identified in the areas bordering the municipality of Senise, however they mostly overlook the Sinni Valley: Francavilla S.S., Chiaromonte, Valsinni, Colobraro, Tursi, Noepoli, San Giorgio Lucano; and on the Agri: Sant’Arcangelo, Roccanova, Tursi, MontalbanoJonico and Craco.
The production area is delimited as follows:
- starting from the insertion of the Frida with the Sinni river, the floodplain areas included between the S.S. are identified for Francavilla sul Sinni Sinnica and the embankment on the right bank of the Sinni up to Rubbio;
- for Chiaromonte, the floodplains starting from the "Armirosse" ditch and between the municipal road "Chiaromonte-Sinnica" and the embankment on the left bank of the Sinni river, as well as the floodplains located on the right of the Serrapotamo stream in the "Ischitella" locality of Chiaromonte;
- for Senise, the territory is identified with the areas served by the irrigation systems of the "AltaVal d'Agri" reclamation consortium (floodplains recovered on the right and left banks of the Sinni river, Sicileo, Visciglio, Massanova, Piano delle Manche, Codicino , Piano delle Rose), as well as the flat left and right areas of the Serrapotamo stream;
- for San Giorgio Lucano, the floodplains located on the left of the Sarmento river in the locality of "Rosaneto" and Piano delle Rose; - for Valsinni, the floodplains located on the right bank of the Sinni river are affected;
- for Colobraro, the floodplains on the right of the Sirini river;
- for the municipality of Tursi, the flat floodplains located on the right of the Agri river and precisely the "Monte Gardens and the Marone Gardens", and those on the right of the Sinni River up to the height between the intersection between the SS Sirinica and the branch for Tursi;
- for Montalbano Jonico, the floodplains along the left bank of the Agri river which, starting from the "Giardinidi Isca", along the S.S. Val d’Agri 103, arrive at the c.da Sant’Elena;
- for Craco, the flat land that flanks the S.P. 76 Craco-Peschiera from the intersection with the S.S. 103 up to Km 8 is indicated;
- for Roccanova, the flat land on the right and left of the Roccanova river;
- for Sant’Arcangelo, the floodplains between the Agri valley floor and the right bank of the river of the same name.

Article 4
The environmental and cultivation conditions of the peppers for which the protected geographical indication is requested must be the traditional ones of the area and in any case suitable for giving the peppers and derivatives the specific quality characteristics.
Therefore, alluvial soils of silt-sandy nature and hilly soils with a mixture that, positioned at an altitude of between 250 and 340 meters, are subject to a typically Mediterranean climate, with precipitations concentrated in the winter period and with temperatures that are highest in the months of July-August (averages of 25.5 ° C) and lowest in the months of January-February (averages of 7.10 ° C).
The sowing technique and the cultivation and transformation processes of the product must refer to the methods indicated below.
Sowing technique and cultivation practices
Sowing
epoch: third decade of February - second decade of March;
sowing method:
- manually spreading on "cold" or "hot" bed seedbeds;
- mechanically in honeycomb containers;
Transplant
epoch: second decade of May - first decade of June;
transplantation method:
- in previously open solchetti
- in holes made with a wooden dowel;
size of seedlings: seedlings at the 3rd 5th leaf with a height of 10-15 cm.
planting layout:
- simple row: 25-30 cm along the row and 70-80 cm between the rows;
- twin row: 35 cm along the row, 35 cm between the two twin rows, 120 cm between two bins;
- sunflower: 35 cm along the row and 40 between the rows.

Collection
harvest time: starting from the first ten days of August when the berries reach the typical red-purple color;
harvesting methods: being a scaled ripening species, the harvesting is done manually.
The seed used for reproduction must come from healthy mother plants, selected within the fields in the municipalities referred to in art. 3.
Transformation practice
1. The product must be harvested when fully ripe.
2. The berries must be placed on cloth sheets or nets in dry and well-ventilated rooms, for at least 2-3 days, away from light.
3. The peduncles must be threaded in series with fine twine making sure that the berries are arranged at an angle of approximately 1200 from each other. In this way the characteristic "necklaces" or "serte" will be obtained.
4. The serte must be exposed to the sun and remain there until the water content reaches 10-12%. Subsequently they must be stored in airy rooms.
5. After the drying phase, the peppers must undergo an oven treatment to eliminate the residual moisture to facilitate subsequent milling.
6. The product must be transformed into powder by milling.

Article 5
In the cultivation of peppers with the Protected Geographical Indication "Peppers of Senise", only agronomic practices are suitable to give the product its peculiar characteristics of typicality.
The regional control bodies and the "Consortium for the protection of" Senise peppers "to be set up on the initiative of the Promoting Committee are responsible for checking and ascertaining:
- morphological aspects of the berries referred to in art. 6;
- dry matter content of the pericarp equal to 13-15%.
The Protection Consortium must, among other things:
- verify that the specification is applied by farms;
- provide the producers of "Peppers of Senise" with the services and assistance necessary to implement the present disciplinary document;
- take care of the keeping of the producers' register and the collection of data and information on the "Peppers of Senise";
- promote and manage the brand and the regulation and programming plans of the related production in order to safeguard its economic and commercial value as well as the quality standard;
- exercise surveillance and surveillance activities, also in collaboration with the authorities and bodies of the State, to prevent and suppress counterfeits, irregularities and illegitimities possibly committed against the "Peppers of Senise".

Article 6.
The peppers with a protected geographical indication "Peppers of Senise" upon release for fresh consumption must meet the following characteristics:
"POINTED" type
• characteristics of the peduncle: peduncle firmly attached to the berry which does not detach even after drying;
• berry shape: slightly deformed with barely noticeable ribs;
• stylistic apex: pointed;
• length of the berry: from 10 to 17 cm .;
• basal diameter: from 3.5 to 5 cm .;
• pulp thickness: from 1.5 to 2.2 mm;
• color at commercial maturity:
- green;
- purple red;
• flavor: sweet.
Type "HOOK"
• characteristics of the peduncle: peduncle firmly attached to the berry which does not detach even after drying;
• berry shape: slightly deformed with barely noticeable ribs;
• stylistic apex: curved hook;
• length of the berry: from 11 to 16 cm .;
• basal diameter: from 3.5 to 5.2 cm .;
• pulp thickness: from 1.5 to 2.2 mm;
• color at commercial maturity:
- green;
- purple red;
• flavor: sweet.
• "TRUNK" type
• characteristics of the peduncle: peduncle firmly attached to the berry which does not detach even after drying;
• berry shape: cone-shaped slightly deformed, with very evident ribs, generally, number of three of which one more developed and curved in the apical part; • stylistic apex: trunk (dog's nose);
• length of the berry: from 9 to 14 cm .;
• basal diameter: from 3.0 to 5.1 cm.,
• pulp thickness: from 1.5 to 2.0 mm .;
• color at commercial maturity:
- green;
- purple red;
• flavor: sweet.
The dry product must be:
• In "Serte" or "Necklaces" of variable length from 1.5 to 2.0 m, with the berries (in the same morphological alignments as the fresh ones) arranged in an angled spiral, each with respect to the next, of about 120 ° , water content not higher than 10-12% and red wine color.
• In very fine grain "powder" obtained by grinding dried peppers after treatment in the oven to eliminate the residual moisture.

Article 7
1. It is forbidden to use together with the name referred to in art. 1 and 2 any additional qualification including the adjectives "superior", "extra", "fine", "chosen", "selected", and the like.
2. The oval-shaped trademark with a canary yellow background contains the words "PEPPERS OF SENISE" and "I.G.P." black and "Palatine" typeface and two stylized red and orange peppers, arranged in an "S" shape. The upper pepper is depicted with the tip at the top and the stem at the bottom, while the lower one is depicted with the tip at the bottom and the stem at the top.
To facilitate the impression on packaging through ink stamps, logomonochromatic can also be used.
However, the use of indications that refer to names, company names, or private brands is allowed.
It is also allowed to indicate the names of farms and localities from which hyperpeople actually come, provided they have no laudative meaning.
The "Senise Peppers" must be marketed in the following ways:
Cool state: in wooden boxes with a capacity of 12-15 kg.
Dry state: in serte (necklaces) of the length dil, 5-2.0 m.
Processed: in glass containers, opaque, with a capacity of 500 and 1000 g or in plasticized paper bags, with a transparent window, with a capacity of 50 and 100 g.

Article 8.
Supervision for the application of the provisions of this production specification is carried out by the Ministry of Agricultural, Food and Forestry Resources, which can avail itself of a consortium between the producers in accordance with the provisions established by the 'art. 10 of Reg: (CEE) 2081/92.
