Controne bean
The bean arrived in Controne in 1500, after Pope Clement VII had donated a certain amount of it to the Benedictine monks of the Abbey of San Nicola and found an optimal habitat for growth and cultivation thanks to the excellent pedo-climatic conditions.
Features
It is a bean with a round-oval shape, very white, without spots and without eyes, particularly valuable for its high digestibility and short cooking times due to the thin skin; the pod is also white in color. It has a low aptitude to split during cooking and requires significantly less time than that of a common bean. It has a round-oval shape, small and white, with unique organoleptic characteristics.

Cultivation technique
The sowing of the "Controne Bean" is carried out in the first and second ten days of July in order to have full bloom in the first half of September. The collection of dried bean pods takes place in November.
Production
Every year, on the last weekend of November, Controne dedicates a festival to him, on this occasion it is possible to buy beans or taste the typical dishes of the area: beans in the tochetto, beans and escarole, pasta and beans, or lagana with beans. It is particularly valuable for its high digestibility and thin, practically impalpable skin.
